chore(renovate): group OpenTelemetry, otelsetup and logging updates

otel/log releases drop symbols the contrib bridges and sdk/log still use, and Renovate's default monorepo groups split otel, otel-contrib, otelsetup and logging into separate PRs that each fail to compile. One group lands them together.
